Broccoli & Quinoa Salad


My family and I absolutely LOVE this salad. I would not say this is a speedy dinner…however, it can be stored for 3-4 days! Everyone I have recommended to this salad to has loved-it is definitely a MUST TRY! I add Feta to mine but this is NOT necessary and not vegan!


Tip: If you plan on having over a couple of days make extra of the dressing or add to the salad just before consuming as it gets absorbed quickly! Can be consumed hot or cold (tastes just as good either way)


  • Quinoa
  • Veggie Broth or Water
  • Broccoli
  • Sweet Potato
  • Chickpeas
  • Kale
  • Lemon Juice
  • Olive Oil
  • Fresh Parsley
  • Maple Syrup
  • Salt and Pepper
  • Apple Cider Vinegar
  • Feta (for a non-vegan option)
